CAPE ABALONE SASHIMI WITH SOY SAUCE

Simply fabulous. This pièce de résistance highlights the delicate aroma and exquisite flavour of our live Cape Abalone.
Serves 1
1 medium live I&J Cape Abalone
1 Shiso leaf
10 g crushed ice
Soy sauce for serving
1. 
Wash and clean abalone completely, including the shell, then pat dry with kitchen towel.
2. 
Prepare a bed of crush ice in the abalone shell, place the Shiso leaf on it.
3. 
Slice the abalone into thin slices and arrange on the Shiso leaf.
4. 
Serve with a small bowl of soy sauce for dipping.
