STEAMED CHINESE-STYLE CAPE ABALONE
SHORT DESCRIPTION
							Create a fragrant, elegant dish for two in less than 15 minutes using our live Cape Abalone.
							
							Serves 2						
				INGREDIENTS
							4  small to medium live I&J Cape Abalone 
10 g    golden fried garlic 
10 g    ginger, shredded
10 g    finely sliced spring onion 
30 ml   cooking oil
Fragrant Soy 
  3 ml    sesame oil 
  2 g       coriander root
 20 ml    superior soy 
  50 ml   chicken stock 
  3 g        sugar
  3 g        Knorr Chicken powder
METHOD
							1. 
Clean abalone and pat dry with kitchen towel.
2. 
Arrange abalone on a heat-proof plate.
3. 
Place plate with abalone in a steamer with lid; steam abalone for 5 minutes on a high heat.
4. 
Combine all the ingredients for the Fragrant Soy. Heat a wok; bring the Fragrant Soy mixture to a boil and cook until sugar and chicken powder dissolve completely.
5. 
In a small pot, heat the cooking oil to the smoking point, then carefully pour the hot oil over the shredded ginger and spring onion. Pour Fragrant Soy over the abalone.
6. 
Top each abalone with shredded ginger and spring onion. Garnish with golden garlic.
