FRESH GREEN SALAD WITH SHREDDED CAPE ABALONE

This refreshing light dish highlights the unique ocean flavour and softly-chewy texture of our superb quality, canned Cape Abalone.
Serves 2
1 canned I&J Cape Abalone (large)
Seaweed
5 g Micro cress
10 g Mesclun mixed lettuce
For the dressing
20 ml Lemon juice
20 ml Kikkoman low sodium Soy Sauce
5 ml mirin
5 g spring onion, finely chopped
3 g fresh ginger root, finely chopped
20 g sugar
5 ml sesame oil
5 g white sesame seeds, roasted
1. 
Soak seaweed in salt water then rinse off with running cold water.
2. 
Clean abalone and pat dry with kitchen towel.
3. 
Slice abalone into thin slivers, arrange on a bed of lettuce, seaweed and micro cress.
4. 
Combine all dressing ingredients and emulsify.
5. 
Drizzle dressing over the sliced abalone and salad and serve.
